Seven culinary trends to look out for in 2016
Manhal Naser the CEO and Co Founder of AWJ investments, shares six culinary trends that will hit the plates in 2016.
Trend # 1 – The complete dining experience
When diners decide they want to eat out, they are looking for a complete dining experience. In the culinary world, this is all about the ambience, entertainment and décor offered by the restaurateur. From creative décor of handcrafted ceramics to live entertainment, diners will seek an experience that will be remembered long after the last morsel food is gone.
This is where those stylistic creative flourishes come into play: table setting details, fresh flowers, bottles as décor and even music.
As much as customers value food quality, a restaurant offering a unique experience will be a crowd pleaser.

The 5 senses stimulated and in awe
“Today, true luxury is being the fi rst to experience something. Joy, excitement and fear are just some of the feelings and emotions which burst forth in just a few seconds upon seeing a totally surprising area, upon contact with incrediblydetailed materials, upon hearing new music, discovering unusual tastes, etc. This is the type of experience I wanted to recreate with “Let’s Fall in Diamonds”, explains Charles Kaisin.

A fragrance created for the event will be gently diff used, leaving its imprint in the visitor’s memory, just like the soundtrack created to accompany the space by one of the world’s most well-renowned Belgian DJs. The visitors can continue their journey as they wish: by strolling through the Atrium into the bedroom and bathroom spaces, relaxing on one of the sofas, armchairs or poufs in the living room, or sitting at one of the two tables for 12 guests in the dining room.
Guests can end the day in Bar de la Rotonde, sipping a red and white Diamonds mocktail or tasting a sweet diamond-shaped treat.

There is one jewel among the many hotels and resorts which made me forget Dubai’s busy life, traffic and construction sites. An intimate resort like your very own private escape with top notch facilities. The moment I entered the magnificently scented lobby I felt surrounded by luxurious and tasteful interior design, that resulted in an overwhelming comfortable feeling. Once I stepped out into the gardens and before I decided to take a dip in the over-sized (850 sqm) pool, which laid irresistibly at my feet, I had to explore the magic of the resort and its intimate walkways. In a moment I found myself strolling along the five hundred meters of beautiful private sands stretching out in front of the Arabian sea and the low-rise mansions and villas.
The view from the beach upwards to the resort is as amazing as to look down to the sea, I must admit. The architecture stunning as in some resorts in South Spain, but the warm wind reminded me right away that I am in the Arabian Gulf..
Daytime was to be spent lounging on over-sized daybeds pampered with the immaculate service around the pool – you may have heard about “ cucumbers for your eyes” or I could reserve one of the six air-conditioned cabanas to unwind in a more private area, where we could eat lunch with friends and in the afternoon watch our favorite movies on LCD screens when needing to take a break from the dazzling sun.
Dinner at the One & Only is definitely an experience in itself. Under the culinary guidance of Michelin-starred chef Yannick Alleno you get a choice between Zest and the amazing Stay, where lovers of extraordinary interior design and culinary arts will be more than astonished. For lovers of imaginative cuisine Stay amazes with signature dishes showcasing traditional cooking reinterpreted in a contemporary style. A charming surprise awaits at the Pastry Library as you’re invited to play an active role in the creation of the desserts -You tell the chef and he will compose it ! Light and delicious as it could be.
On some evenings when I felt like strolling along the pontoon to dine above the Arabian waters at 101 on the marina enjoying the panoramic views of the glittering Dubai skyline I really felt like this dream should never be ending.

In the couple’s suite in the sanctuary of Espa , couples can enjoy a treatment, which draws from a time-honoured Arabian ritual, the private Rhassoul experience A secluded VIP entrance, private lobby area and garden terrace ensure the ultimate in privacy for some lovebirds.
The total relaxation can be found in the tailored spa experiences in the One & Only, and it is needless to say, that this resort is one the most romantic places in this world where dreaming of a fairy tale is still possible.
SAVE THE DATE!
The 45-year-old French triple Michelin-starred chef Yannick Alleno will once more visit One & Only from 24th – 26th April 2015.
Over the past twenty-five years, Yannick Alleno has surprised and delighted the world of fine gastronomy with his marvellous creations. Decreed by Gault & Millau as Chef of the Year 2015, his presence at One & Only is an extraordinary occasion to savour his French-themed tapas at 101 Dining Lounge and Bar on the 25th April, or watch him showcase a selection of signature dishes in a four-course or six-course menu at Stay on the 26th April.
Do not miss the chance for a distinctive yet intimate and romantic evening amidst the stunning decor or under the stars and overlooking the grand pool and the Moorish-inspired gardens. It will surely be a One & Only experience.
The resort’s 10,000-square-feet spa uses the healing and cleansing powers of water. Treatments feature water in combination with salt and crystals to restore negative ions, bringing balance to emotions and energy levels. My treatment, Ocean Embrace, indulged me in 120 minutes of total relaxation and a new me was ready for sunset cocktails at Sundara, the resort’s beachfront restaurant, whose name is Sanskrit for ‘beautiful’ and pays tribute to the glowing sun that warms this Indian Ocean hotspot and highly social meeting place.
After a few days and at your own pace, move on to the Four Seasons Resort at Sayan in Ubud. You will enjoy the lush beauty of flowers and abundant nature at both resorts, but a different feel awaits in the extraordinary Balinese-inspired pool villas at each location. What I personally loved at Four Seasons Resort Jimbaran, among so many others, was the old Balinese wooden door leading to my lush little garden in front of the villa with its pool and outdoor dining which gave me the feeling of coming home.
The Four Seasons Resort at Sayan, lies thirty-five kilometres (twenty-two miles) north-north-east of Ngurah Rai International Airport on eighteen acres of lush, green terraced rice slopes. The resort overlooks the Ayung River which flows through the central highlands of Bali. On my arrival, I first crossed a dramatic gorge via a solid teak bridge, leading to an elliptical lotus pond. It rests on the roof of the resort’s three-level central building and offers a panoramic view of the valley. I was even more amazed when driven by buggy to my one-bedroom pool villa; I entered from the rooftop, which has lotus gardens and a wooden deck. Descending through a circular stone staircase to the lower level, the most elegant yet authentic Balinese set-up with a large wooden deck and twelve-square-metre plunge pool in absolute privacy lay before me.
Taking a walk around the property later, I discovered that all the sixty beautifully appointed suites, one-bedroom and two-bedroom private villas plus the Royal Villa are discretely placed in the landscape and a countryside feeling arose in me, one entirely different to the pastoral sensations experienced in Europe. I passed Balinese gardeners taking care of the immaculate fields and strolled down paths with magnificent flowers to discover the astonishing Yoga Bale in the middle of a rice field before I met my therapist at the Sacred River Spa for a treatment to restore and balance the subtle inner energies, uniting body, mind and spirit.
Extending from the top of the verdant hillside down to the river’s edge, the Ayung Terrace restaurant is elegantly situated atop the slope of the lush gorge with breathtaking views of the swift-flowing river below in the daytime. As night falls, it is a romantic dinner location with flickering lights in the near hills, with the river gushing nearby and the wood-burning oven crackling. The healthy, western fare complements the stunning surroundings.
Island of culture
Treasured for its lush landscapes and relaxed pace, Bali is also famous for its artistic traditions including dance, sculpture, wood carving, handcrafts and music. Local history is punctuated by breathtaking vistas at the Uluwatu Temple, where the inner sanctum balances on the edge of a steep cliff.
Making offerings is central to life in Bali. Typically consisting of a flower, a few grains of rice, something to drink and burning incense, the offerings are placed in a small basket known as a canang sari, which has been hand woven or folded from palm leaves.
Time your visit to Uluwatu so that you’re there for the traditional Balinese dance ceremony that takes place at the temple each night around sunset. Kecak (pronounced ‘ke-chak’) is a fire dance that was originally performed by Balinese men as a trance ritual. During the performance, men sit in concentric circles and chant as the Ramayana is danced. It’s a spectacular scene that ends with an even more powerful fire display.
Tenganan Village, nestled among hills on the eastern edge of the island, remains true to the historic roots of the Bali Aga, the original Balinese people. Traditional houses line a central street, where you’re more likely to encounter a rooster or cow than a car or motorbike, which are outlawed in the village.
Island of flavors
The Balinese Cooking School at Four Seasons Jimbaran, a favourite stop for novice and experienced chefs, offers a course on Balinese cuisine. It begins with a trip to a local market, where students shop for ingredients. Back at the resort, Four Seasons chefs expertly demonstrate how to make some of the island’s most delicious dishes, including satay lilit ayam (chicken satay), acar sayur (pickled vegetables) and pepes ikan kakap (grilled snapper wrapped in banana leaf).
A steaming cup of Balinese coffee and a traditional Indonesian breakfast at Taman Wantilan at Four Seasons Resort Bali at Jimbaran Bay was my favourite way to start the day. Local breakfast options include Balinese-style fried rice and bubur ayam, a Balinese rice porridge served with shredded chicken, roasted coconut, wild ginger and lemon grass.
For sunset cocktails with a view of Jimbaran Bay, the Four Seasons Resort’s Sundara restaurant is hard to beat. It’ll take many meals here to work your way through the menu’s offerings. Try something from the small plates menu, which includes sate, bakso and salt and pepper squid. For dinner, the steak is superb, as are local seafood options, each brushed with bumbu spice paste.
Another location specialising in small plates is Cuca, which serves up tapas. The roasted tiger prawns and barbecued octopus, each prepared with local ingredients, are tremendously good. This restaurant is also revered for its desserts (slow-baked caramel apples with Javanese black pepper ice cream are a wonder) and signature cocktails, which I recommend sipping in the coconut-tree-framed garden lounge.
Traditional Indonesian fare is also on the menu at local favourite Bumbu Bali. Named after the blend of spices customary in Balinese cuisine, this spot goes the extra mile to deliver the most authentic dining experience possible. Chefs spend hours each day perusing local markets to ensure that each dish – from skewered sate to refreshing papaya salad – is at its freshest. And since eating out is not a social custom in Bali, the atmosphere here has been carefully crafted to evoke the feeling of dining in a traditional village home.
Island of relaxation
A holiday in Bali can do wonders for the body, mind and soul. The sense of peace exuded by the island is contagious, and even a few days spent here can reinvigorate the most weary of travellers.
The spa at Four Seasons Resort Bali at Jimbaran Bay offers a holistic menu of services and treatments, many born from traditional Balinese beauty and cultural rituals that have been passed down through generations. A selection of these offerings is rooted in Bali Usada, an ancient healing system based on the belief that what you do, think, learn, touch and eat all have an impact on your health and happiness.
Each spa programme includes daily morning yoga sessions (served with a healthy breakfast drink and a muffin) and spa treatments, which are carefully based on individual needs. These top-tier treatments soothe the body, mind and spirit through immersive, multiple sensory practices. The Executive Revival includes a sun and sound oceanfront treatment that begins with a fifteen-minute ‘sound bath’, created by Balinese gongs and played in order to recharge the nervous system. The massage and facial that follow use organic spa products and locally sourced ingredients like wild basil, aloe and cocoa blossoms.
The two-hour Water Valley oceanfront treatment takes place outdoors, the massage and facial accompanied by the soothing sounds of the nearby waterfall. And during the Lulur Jimbaran treatment, once your body has been buffed with a luxurious lulur scrub (a beauty secret inherited from Javanese royalty) and smoothed with a skin-nurturing yogurt, take a dip in a hydrating bath where you’ll sip a cup of loloh, a therapeutic Balinese herbal elixir.
Moon Salutations are believed to cool down fiery impulses and ‘hot’ emotions, allowing creative energy to flow. The last Full Moon Yoga of 2015 at the Four Seasons Resort at Sayan at 7.30pm on 25th December coincides with Christmas Day. The Full Moon Yoga programme is inspired by the uplifting energy of this important day in the Balinese calendar, enabling you to honour the ‘yin’ or divine feminine side with Moon Salutations, to counter balance the ‘yang’ or masculine nature of classical Sun Salutations (Surya Namaskar) of day yoga.
And don’t miss the dynamic session of AntiGravity® Yoga at the new Dharma Shanti Yoga Bale. AntiGravity® Yoga is a ‘flying’ technique, using hammocks to support your body into inverted postures to relieve stress, encourage healthy blood circulation, and in short, have fun!

New research from Hotels.com™ Mobile Travel Tracker*, has discovered a new millennial trend, taking place in the UAE, of ‘travel bragging’ on social media to build kudos amongst their friends, and even faux friends on social. Trading in their #TravelBrag for ‘likes’, 44% admit they spend over four hours a day on their mobiles whilst traveling, often more glued to the small screen than the beach scene.
When it comes to what social savvy travelers are bragging about on their trips, food snaps (65%) is up there. Travel braggers show off their food to those stuck at home with their sad salad, posting weird and wonderful dishes from across the globe. Fried spider anyone?
Being a generation of filter-loving, selfie-stick addicts, a majority (70%) of 18-29-year-olds admit they would rather upload a selfie than a picture with their loved ones (58%) on holiday #savage. Not only that, but more men (76%) than women (55%) have admitted to their love of a selfie. There are also still some culture vultures out there who would rather share a cityscape (49%) than their favorite fashion (26%).
The new research has also proven the long-debated theory that romance really is dead, with 20% admitting they would rather travel with their smartphone than their partner. Travelers even get more anxious when their phone runs out of battery (19%) than if they argue with their partner on a trip (5%) #FOMMO (fear of missing my mobile).
The research, commissioned by Hotels.com identifies new trends in how mobile technology is used during travel, as it launches its second annual Mobile Travel Tracker Report.
“At Hotels.com we know that 51% of people wouldn’t enjoy their holiday without their smartphone in their hand – how could they possibly capture the best selfie or show off to their friends at home without it! Not only that, we also know that getting the perfect picture plays an even bigger role with 17% of travelers admitting they would pose anywhere for that flawless selfie, often putting selfies ahead of safety”, said Daniel Craig, VP of Mobile at Hotels.com brand.
With a 50% of travelers refusing to book a hotel that doesn’t offer free Wi-Fi, there is a clear demand for travelers to be connected at all times.

World’s biggest luxury hotel brand teams up with renowned futurist to predict the future of luxury travel
IHG (InterContinental Hotels Group), one of the world’s leading hotel companies announces that its InterContinental® Hotels & Resorts brand has sought the expertise of Fortune 500 Futurist, Faith Popcorn. The collaboration comes as the InterContinental brand celebrates 70 years of pioneering luxury travel and looks ahead to the next 70 years.
Looking at luxury travel trends of the future, Faith focused specifically on the guest experience, service, destinations as well as hotel design. She believes that Virtual Reality (VR) escapism and immersive brand experiences will shape service and guest experiences in the future of luxury travel:
Clanning Experiences: VR technology will enable real-time sharing of adventure and luxury among friends or family who are spread around the world. It will mean that guests and their loved ones can enjoy simulated adventures in real-time, whether it be a walk through the Serengeti or an ocean swim with extinct marine life.
Customised Wardrobes: Hotels will partner with fashion brands to sponsor guests’ in-room wardrobes, complete with 3D printed designer clothing. Wardrobes will be customised to suit personal taste based on online shopping habits, size and local weather conditions.
Fantasy Escapes: Luxury as we know it today will become so accessible that consumers will seek more extreme and un-attainable experiences. Hotels will provide guests with game-like environments for fantasy escapes, which could involve living out danger in a safe environment.
Described as “The Trend Oracle”, Faith Popcorn has worked with leading Fortune 500 companies to help them accurately predict consumer trends. With a documented 95% accuracy rate, InterContinental Hotels & Resorts teamed up with Faith as part of the brand’s ongoing commitment to remain at the forefront of luxury travel.
Futurist Faith Popcorn commented: “In envisioning with InterContinental Hotel & Resorts to mark their 70-year anniversary, we’ve forecast what the future holds for luxury travel. Consumers will be craving immersive experiences which will allow them to indulge in luxury in both a physical and a virtual sense. By harnessing Virtual Reality (VR) and the constant flow of personal likes, dislikes and bio-data, hotels will be able to provide guests with once-in-a-lifetime experiences seamlessly and spontaneously—or so it will seem.” By 2086, as space itself becomes the ultimate luxury, VR will evolve interior design so that it can be tailored by guests, and luxury travel will offer access to never-before-explored locations and immersive experiences:
Building Down: With 70% of the world’s population set to be urban by 2050, the design and structure of luxury hotels will change dramatically with brands set to adopt new architectural solutions such as ‘building down’, to fit to the changing landscape.
Immersive Spaces: Guests will be able to design spaces specifically tailored to their personal aesthetics and needs. From customisable holographic wall art to fully adjustable interior design, guests will be treated to state of the art facilities to ensure maximum satisfaction and relaxation.
World Experience: Different wings or rooms in hotels will be created to offer guests a taste of cultural experiences from different corners of the world – from golden Caribbean beaches to white blanket ski slopes, all located in the same hotel.
In order to continue creating new experiences for guests that elevate the everyday, InterContinental Hotels & Resorts have teamed up with world famous interior designer specializing in luxury hotel design, Tara Bernerd, for the development of the brand’s new design philosophy.
Commenting on the future of luxury design in hotels Tara Bernerd said:“InterContinental Hotels & Resortsare constantly looking to evolve their interiors and aesthetic to make their properties more unique and luxurious for guests. Interior architecture and design play a very powerful part of a guest’s experience and I am delighted to be supporting InterContinental Hotels & Resorts on their new design philosophy that will hope to see them continue to push the boundaries of luxury travel into the future.” InterContinental Hotel & Resorts is set to break new territory once again, with the development of the Songjiang Quarry Hotel in China. The hotel is set to be built in a 90m deep quarry outside of Shanghai. Boasting cascading waterfalls, extreme sport facilities such as bungee jumping and rock climbing, underwater bedrooms and cutting-edge conference facilities, it is set to be the greenest hotel ever built, with plans to power the luxury resort with geothermal and solar energy.
Simon Scoot, VP Global Brand Strategy at InterContinental Hotels & Resorts added: “Our collaboration with Faith Popcorn and partnership with Tara Bernerd further ensures the InterContinental brand remains at the forefront of luxury travel. Innovation and pioneering spirit is in the InterContinental brand’s DNA. Since the launch of the brand in 1946, followed by the opening of the first hotel in Belem, Brazil, InterContinental Hotels & Resorts opened the gateway to a whole new world of glamour and discovery for a jet-set generation. 70 years on, as global travel has transformed, the InterContinental brand has evolved and adapted with it.” With nine iconic openings in the last year including new hotels in London, Dubai, and Chennai, and the upcoming opening of InterContinental Beijing Sanlitun later this year, as well as the re-opening of the iconic InterContinental New York Barclay, the brand continues to build its luxury legacy.
Trend # 2 – Diverse and cultural connections
2016 will see an expansion in the delivery of different heritage cuisines. Consumers are no longer tied down to their local restaurant, but are willing to explore and try new places which offer the cultural cuisine coupled with the perfect ambience.
Trend # 3 – The fusion revolution
Diners are always on a culinary quest for the next interesting taste that will enrich their palates. With the advent of the internet, consumers are more knowledgeable and curious about the different foods available and are more than willing to taste the next fusion creation. While some may see this as a loss of authenticity, others have embraced ethnic ingredients like soy sauce, jalapenos, chili and hummus. These ingredients have even become household staples, facilitating fusion cuisine’s popularity with diners.
Trend #4 – Digital technology drives food preferences
Unsurprisingly, technology has infiltrated the dining scene. The increased smartphone penetration in the Middle East has made it possible for restaurants to build delivery fleets at a fraction of the cost incurred previously. With technology enabling consumers to track food deliveries by the minute, this additional option will soon be a norm in 2016. In addition to tracking food deliveries, consumers have come to expect certain connectivity attached to their dining experiences, be it the ability to order restaurant delivery with a smartphone app, check in online on social media, or review menus and make reservations online.
Trend #5- The popularity of smart casual dining
Smart casual dining is a concept that has been gaining popularity every year. These restaurants offer the quality of fine dining combined with the speed of fast food at affordable prices. The simplicity, taste and affordability will make smart casual dining more popular this year for consumers.
Trend #6 – Food Trucks on the rise
Food trucks are no longer just a fancy idea and are a trend that is catching on in the region. Most food trucks started out serving just sandwiches and burgers for consumers on the move. Today, more sophisticated foods are being added. Gourmet food trucks are starting to appear as part of the evolution of the new culinary trend.
Trend #7 – Scrambling for clean menus
A greater awareness of healthy eating is changing the eating habits of consumers in the Middle East. A greater awareness of healthy eating is changing the shopping habits of consumers in the UAE and Saudi Arabia. They say they are now more health-conscious when they buy, taking more care to read nutrition labels and seeking out products with health benefits, according to a new survey. They also want food labelling to be much clearerCoCncc There is a constant need for balance between selecting food that is fresh and healthy versus food that is tempting and exciting. With more and more consumers gravitating towards health claims of natural, organic, whole-wheat and gluten free, healthy dining will be a key driver for people wanting to dine out. The vegetable side dishes will be the hero of the plate for 2016.

It has taken almost three decades to accomplish this dream in the Principality of Monaco and shape the three current faces of the Ballets de Monte-Carlo. In 1985, the current Ballets de Monte-Carlo company was created as a result of the commitment of H.R.H. the Princess of Hanover who wanted to continue the long tradition of dance in Monaco and its famous “ballets russes”.
The arrival of Jean-Christophe Maillot in 1993 led to the company’s international growth through the choreographies he created for it. He also enhanced its repertoire by inviting established or emerging choreographers to work with the exceptional tool of its 50 dancers.
